Heat the oil in a large saucepan over medium heat. Add the onion, carrot, and garlic and cook until softened, about 5 minutes. Add the chicken thighs and cook until browned all over, about 5 minutes more. Stir in the cumin, smoked paprika, turmeric, salt and black pepper. Add the chicken stock or broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes. Serve over cooked white rice sprinkled with fresh cilantro leaves. Enjoy!
Thai Coconut Soup Curry:
Ingredients:
For the soup curry:3 tablespoons vegetable oil5 shallots, thinly sliced3 cloves garlic, minced1 tablespoon grated ginger2 teaspoons red curry paste2 cans (14 ounces each) light coconut milk3 cups chicken stock or broth1 small head cauliflower (about 1 pound), cut into floretsSalt and black pepper, to tasteFor the toppings:1/2 cup dry roasted unsalted peanuts, coarsely chopped1/4 cup fresh cilantro leavesInstructions:
Heat the oil in a large saucepan over medium heat. Add the shallots, garlic, ginger, red curry paste and cook for 1 minute until fragrant. Add the coconut milk and bring to a boil. Add the chicken stock or broth and bring to a boil again then reduce the heat to low and simmer for 10 minutes. Season with salt and black pepper to taste. To serve, ladle the soup curry into bowls then top with dry roasted unsalted peanuts and fresh cilantro leaves if desired

Instructions:
In a large saucepan over medium heat, cook the meat, onions, garlic, bell pepper, and jalapeno pepper until the meat is browned and the vegetables are tender. Drain off any excess fat. Add the tomatoes with their juice, kidney beans, tomato sauce, tomato paste, chili powder, cumin, oregano, salt and black pepper. Bring to a simmer and cook for about 30 minutes. Serve with shredded cheese and sour cream on top if desired. Enjoy!
