For a classic comfort food combo, try this ham and split pea soup recipe. It's perfect for chilly winter days.
Ingredients: -1/2 lb. dried split green peas -1 ham bone or hunk of ham (or smoked bacon) -1 large onion, chopped -3 carrots, peeled and diced -2 celery stalks, diced -4 cloves garlic, minced -4 cups chicken stock or broth -1 bay leaf -1/2 tsp. dried thyme -Salt and black pepper to taste Method:
1) In a large pot or Dutch oven, soak the split peas in cold water overnight. 2) Drain and rinse the peas, then place them back in the pot. 3) Add the ham bone (or hunk of ham), onion, carrots, celery, garlic, chicken stock or broth, bay leaf, thyme, salt and black pepper to the pot. 4) Bring to a boil over high heat then reduce the heat to low and simmer for 1 – 1 1/2 hours until the peas are tender. 5) Remove the ham bone (or hunk of ham) from the soup and chop the meat off the bone then return it to the soup. 6) Discard the bay leaf and thyme sprigs before serving.

hearty, comforting and delicious: Consomme with Meat Pie
This wonderfully simple dish is perfect for a winter's day. Warm, hearty and comforting, it will leave you feeling satisfied and happy!
To make the consomme, you will need: 1kg beef or chicken bones 2 litres water 1 onion, quartered 2 carrots, chopped 4 celery sticks, chopped 2 bay leaves 1 sprig of thyme 10 black peppercorns 1 parsley stalk
To make the pie, you will need: 1 quantity of shortcrust pastry (enough to line a 23cm pie dish) 800g beef or chicken mince 50g butter 1 onion, finely chopped 3 carrots, finely diced 3 celery sticks, finely diced 3 tablespoons plain flour 600ml hot beef or chicken consomme (from above) 2 teaspoons Worcestershire sauce 1 tablespoon rosemary leaves, chopped
6 sage leaves, chopped 4 sheets of puff pastry (each sheet cut into quarters) beaten egg to glaze
- Preheat oven to 190C/170C fan/gas 5. * To make the consomme, place the bones in a large saucepan with the water and bring to the boil. Reduce the heat and simmer for 1½ hours. * Remove from the heat and allow to cool slightly before straining through a fine sieve. Discard the bones and vegetables. * Place the strained consomme in a large saucepan and add the onion, carrots, celery sticks, bay leaves, thyme sprigs, peppercorns and parsley stalk. Bring to a gentle simmer and cook for 30 minutes. Strain again and discard the vegetables. Season to taste with salt and pepper if necessary. reserve 600ml of the consomme for use in the pie filling * To make the pie filling, heat a large non-stick frying pan over medium-high heatand add the mince. Cook for 8-10 minutes until browned all over. Remove from the heat with a slotted spoon and set aside. * Melt butter in same pan over medium-high heatand add onions cook for 8-10 minutes until softened then add carrotsand celery cook for 5 minutes until softened then stir in flouruntil well combined cooking for 1 minute more. Gradually stir in hot consomme until mixture thickens then return mince to pan with Worcestershire sauceand rosemary leave stirring occasionally for 5 minutes until mixture begins to bubble. remove from heat . Set mixture aside to cool completely . Preheat oven 200C / 180 fan oven / gas 6 . * To assemble pie , roll out pastry on a lightly floured surface to 3mm thickness . Cut out 12 circles using an 7cm round cutter . Re-roll pastry as needed . line base and sides of a 23 cm pie dish with pastry circles , trimming off excess pastry . spoon filling into pastry case . brush pastry edges with some beaten egg . place puff pastry squares on top of filling overlapping slightly press down gently around edges to seal well . brush squares with more beaten egg wash refrigerate for 30 minutes before baking in preheated oven 20 - 25 minutes until golden brown
