Ingredients: 1 tbsp. olive oil 1 onion, chopped 3 cloves garlic, minced 1 carrot, peeled and chopped 1 celery stalk, chopped 2 cups chicken or vegetable stock 1 can (15 oz) chickpeas, drained and rinsed 1 can (14.5 oz) diced tomatoes, undrained 1 tsp. dried oregano 1 tsp. dried basil ½ tsp. salt ¼ tsp. black pepper 1 cup frozen green peas 4 cups hot cooked pasta of your choice ( such as shells, macaroni or fettuccine noodles) PARmesan CHEESE BREEZE , optional ( recipe follows ) Instructions:

In a large pot or Dutch oven, heat oil over medium heat. Add onion, garlic, carrot and celery; cook until vegetables are tender, about 8 minutes. Stir in stock, chickpeas, tomatoes with juice, oregano, basil, salt and pepper. Bring to a boil over high heat; reduce heat to low and simmer for 10 minutes. Stir in peas and pasta; cook for 5 minutes or until heated through . Serve with Parmesan Cheese Breeze if desired .

-1 tablespoon olive oil -1 onion, diced -3 cloves garlic, minced -2 carrots, peeled and diced -2 stalks celery, diced -1 red bell pepper, diced -8 cups chicken broth or stock -1 can (15 ounces) black beans, drained and rinsed -1 can (14.5 ounces) diced tomatoes, undrained -1 tablespoon chili powder -1 teaspoon cumin -1 teaspoon smoked paprika -Salt and freshly ground black pepper to taste -Optional toppings: shredded cheese, chopped fresh cilantro, sour cream, diced avocado

Instructions:

Heat the oil in a large pot over medium heat. Add the onion, garlic, carrots, celery, and bell pepper. Cook until the vegetables are tender, stirring occasionally. Add the chicken broth or stock and bring to a boil. Add the black beans, tomatoes with their juice, chili powder, cumin, smoked paprika, salt and black pepper. Simmer for about 15 minutes until heated through. Serve with shredded cheese, chopped fresh cilantro leaves, sour cream and avocado as desired.

A warm and hearty homemade meal is the perfect way to comfort yourself on a cold winter day. This recipe for consomme with meat pie is a classic comfort food dish that will leave you feeling satisfied and happy.

1/4 teaspoon chili powder Fiesta Rice (see recipe below) 4 ounces queso fresco, crumbled 1/4 cup chopped fresh cilantro leaves Instructions:

  1. Preheat oven to 375 degrees Fahrenheit.

  2. In a large bowl, combine chicken thighs with olive oil, diced onion, garlic, oregano, smoked paprika, cumin powder and chili powder. Mix well to coat the chicken evenly.

  3. Spread the mixture onto a baking sheet and bake for 25 minutes or until the chicken is cooked through.

  4. While the chicken is baking, prepare Fiesta Rice according to recipe below.

  5. To assemble tacos, place a few spoonfuls of Fiesta Rice onto each tortilla shell, top with cooked chicken and queso fresco cheese. Garnish with freshly chopped cilantro leaves and serve immediately. Enjoy!
