Ingredients: 1 tbsp. olive oil 1 onion, chopped 3 cloves garlic, minced 1 carrot, peeled and chopped 1 celery stalk, chopped 2 cups chicken or vegetable stock 1 can (15 oz) chickpeas, drained and rinsed 1 can (14.5 oz) diced tomatoes, undrained 1 tsp. dried oregano 1 tsp. dried basil ½ tsp. salt ¼ tsp. black pepper 1 cup frozen green peas 4 cups hot cooked pasta of your choice ( such as shells, macaroni or fettuccine noodles) PARmesan CHEESE BREEZE , optional ( recipe follows ) Instructions:
In a large pot or Dutch oven, heat oil over medium heat. Add onion, garlic, carrot and celery; cook until vegetables are tender, about 8 minutes. Stir in stock, chickpeas, tomatoes with juice, oregano, basil, salt and pepper. Bring to a boil over high heat; reduce heat to low and simmer for 10 minutes. Instructions:
Heat the oil in a large pot over medium heat. Add the onion, garlic, carrots, celery, and bell pepper. Cook until the vegetables are tender, stirring occasionally. Add the chicken broth or stock and bring to a boil. Add the black beans, tomatoes with their juice, chili powder, cumin, smoked paprika, salt and black pepper. Preheat oven to 375 degrees Fahrenheit.

In a large bowl, combine chicken thighs with olive oil, diced onion, garlic, oregano, smoked paprika, cumin powder and chili powder. Mix well to coat the chicken evenly.
